Ingredients:
- 1 cup unsalted butter
- 1 tsp vanilla extract
- 3/4 cup granulated white sugar
- 3/4 cup dark brown sugar
- 1 large egg
- 2 large egg yolks
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp sea salt
- 1 cup semi-sweet chocolate chunks
- 3/4 cup toffee bits
Instructions:
- Place the butter in a heavy-bottomed stainless steel skillet over medium heat. Melt and cook while whisking constantly until mahogany-colored bits form at the bottom and it smells like toasted hazelnuts.
- Remove butter from heat, stir in the vanilla extract, and let cool for 15 minutes.
- In a large bowl, whisk the cooled brown butter with the granulated white sugar and dark brown sugar until glossy.
- Add the whole egg and two egg yolks, whisking vigorously until the batter lightens in color and looks fluffy.
- Fold in the all-purpose flour, baking soda, and sea salt using a spatula until just combined.
- Gently fold in the semi-sweet chocolate chunks and toffee bits.
- Scoop dough into portions and chill for at least 2 hours before baking.
