Ingredients:

  • 1 cup unsalted butter
  • 1 tsp vanilla extract
  • 3/4 cup granulated white sugar
  • 3/4 cup dark brown sugar
  • 1 large egg
  • 2 large egg yolks
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1 cup semi-sweet chocolate chunks
  • 3/4 cup toffee bits

Instructions:

  1. Place the butter in a heavy-bottomed stainless steel skillet over medium heat. Melt and cook while whisking constantly until mahogany-colored bits form at the bottom and it smells like toasted hazelnuts.
  2. Remove butter from heat, stir in the vanilla extract, and let cool for 15 minutes.
  3. In a large bowl, whisk the cooled brown butter with the granulated white sugar and dark brown sugar until glossy.
  4. Add the whole egg and two egg yolks, whisking vigorously until the batter lightens in color and looks fluffy.
  5. Fold in the all-purpose flour, baking soda, and sea salt using a spatula until just combined.
  6. Gently fold in the semi-sweet chocolate chunks and toffee bits.
  7. Scoop dough into portions and chill for at least 2 hours before baking.
