Ingredients:
- 4 boneless, skinless chicken breasts (about 1.5 pounds or 680 grams)
- Salt and pepper, to taste
- 2 tablespoons (30 ml) olive oil
- 2 cups (500 ml) cherry tomatoes, halved
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon sugar
- 1/4 cup (60 ml) chicken broth
- 1/4 cup (60 ml) fresh basil, chopped (plus extra for garnish)
- 1 cup (100 g) shredded mozzarella cheese
Instructions:
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper.
- In a skillet, heat olive oil over medium heat; add chicken. Sear both sides until golden, about 4-5 minutes per side.
- In a mixing bowl, combine cherry tomatoes, garlic, oregano, sugar, chicken broth, and chopped basil.
- Pour the tomato mixture over seared chicken in the baking dish.
- Cover with aluminum foil and bake for 20 minutes.
- Uncover, sprinkle mozzarella cheese over the top, and bake for an additional 10-15 minutes until cheese is bubbly and golden (internal temperature should reach 165°F/74°C).
- Garnish with fresh basil before serving.
