Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 pounds or 680 grams)
  • Salt and pepper, to taste
  • 2 tablespoons (30 ml) olive oil
  • 2 cups (500 ml) cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar
  • 1/4 cup (60 ml) chicken broth
  • 1/4 cup (60 ml) fresh basil, chopped (plus extra for garnish)
  • 1 cup (100 g) shredded mozzarella cheese

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper.
  3. In a skillet, heat olive oil over medium heat; add chicken. Sear both sides until golden, about 4-5 minutes per side.
  4. In a mixing bowl, combine cherry tomatoes, garlic, oregano, sugar, chicken broth, and chopped basil.
  5. Pour the tomato mixture over seared chicken in the baking dish.
  6. Cover with aluminum foil and bake for 20 minutes.
  7. Uncover, sprinkle mozzarella cheese over the top, and bake for an additional 10-15 minutes until cheese is bubbly and golden (internal temperature should reach 165°F/74°C).
  8. Garnish with fresh basil before serving.
