Ingredients:

  • 1/2 cup (1 stick, 113g) unsalted butter, softened, plus more for greasing the pan
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (3 medium) mashed ripe bananas (approximately 360g)
  • 1/2 cup (120ml) buttermilk (or 1/2 cup milk + 1/2 tablespoon lemon juice/vinegar)
  • 2 cups (250g) all-purpose flour, plus more for dusting the pan
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 4 ounces (113g) cream cheese, softened
  • 1/4 cup (1/2 stick, 57g) unsalted butter, softened
  • 2 cups (240g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons milk or cream (to adjust consistency)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Add the mashed bananas and buttermilk, mixing until just combined. Be careful not to overmix.
  5. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Again, no overmixing!
  7. Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the bars cool completely in the pan on a wire rack before frosting.
  9. While the bars are cooling, prepare the frosting. In a mixing bowl, beat together the softened cream cheese and butter until smooth.
  10. Gradually add the sifted powdered sugar, beating until smooth. Stir in the vanilla extract.
  11. Add milk or cream, one tablespoon at a time, until the frosting reaches your desired consistency.
  12. Once the bars are completely cool, frost them evenly with the cream cheese frosting.
  13. Cut into squares and serve these delicious Banana Bars.
