Ingredients:
- 1/2 cup (1 stick, 113g) unsalted butter, softened, plus more for greasing the pan
- 3/4 cup (150g) granulated sugar
- 1/4 cup (50g) packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups (3 medium) mashed ripe bananas (approximately 360g)
- 1/2 cup (120ml) buttermilk (or 1/2 cup milk + 1/2 tablespoon lemon juice/vinegar)
- 2 cups (250g) all-purpose flour, plus more for dusting the pan
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 4 ounces (113g) cream cheese, softened
- 1/4 cup (1/2 stick, 57g) unsalted butter, softened
- 2 cups (240g) powdered sugar, sifted
- 1 teaspoon vanilla extract
- 2-4 tablespoons milk or cream (to adjust consistency)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Add the mashed bananas and buttermilk, mixing until just combined. Be careful not to overmix.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Again, no overmixing!
- Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the bars cool completely in the pan on a wire rack before frosting.
- While the bars are cooling, prepare the frosting. In a mixing bowl, beat together the softened cream cheese and butter until smooth.
- Gradually add the sifted powdered sugar, beating until smooth. Stir in the vanilla extract.
- Add milk or cream, one tablespoon at a time, until the frosting reaches your desired consistency.
- Once the bars are completely cool, frost them evenly with the cream cheese frosting.
- Cut into squares and serve these delicious Banana Bars.
