Ingredients:

  • 2 cups rolled oats (180 g)
  • 1/2 cup unsweetened cocoa powder (50 g)
  • 1/2 cup maple syrup or honey (120 ml)
  • 1/4 cup unsweetened almond milk or milk of choice (60 ml)
  • 1/4 cup melted coconut oil or unsalted butter (60 ml)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips (90 g)
  • 1/4 cup milk chocolate chips (45 g)
  • 1/4 cup white chocolate chips (45 g)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, cocoa powder, baking powder, and salt.
  3. In a separate bowl, whisk together maple syrup, almond milk, melted oil/butter, and vanilla extract.
  4. Pour the wet ingredients into the dry oat mixture and stir until fully combined.
  5. Fold in the dark, milk, and white chocolate chips.
  6. Transfer the mixture into a greased or parchment-lined baking dish and press it down evenly.
  7. Bake in the preheated oven for 25 minutes until set.
  8. Remove from the oven and let it cool for 15 minutes, then refrigerate for at least 30 minutes.
  9. Cut into squares and serve.
