Ingredients:
- 2 cups rolled oats (180 g)
- 1/2 cup unsweetened cocoa powder (50 g)
- 1/2 cup maple syrup or honey (120 ml)
- 1/4 cup unsweetened almond milk or milk of choice (60 ml)
- 1/4 cup melted coconut oil or unsalted butter (60 ml)
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup dark chocolate chips (90 g)
- 1/4 cup milk chocolate chips (45 g)
- 1/4 cup white chocolate chips (45 g)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine rolled oats, cocoa powder, baking powder, and salt.
- In a separate bowl, whisk together maple syrup, almond milk, melted oil/butter, and vanilla extract.
- Pour the wet ingredients into the dry oat mixture and stir until fully combined.
- Fold in the dark, milk, and white chocolate chips.
- Transfer the mixture into a greased or parchment-lined baking dish and press it down evenly.
- Bake in the preheated oven for 25 minutes until set.
- Remove from the oven and let it cool for 15 minutes, then refrigerate for at least 30 minutes.
- Cut into squares and serve.
