Ingredients:

  • 2 (5 ounce/142g) cans tuna, drained well
  • 1/2 cup (113g) mayonnaise
  • 2 tablespoons mango chutney, finely chopped
  • 1 tablespoon mild curry powder
  • 1 tablespoon lemon juice
  • 1/4 cup (40g) dried apricots, finely chopped
  • 2 tablespoons toasted slivered almonds
  • 2 tablespoons finely chopped red onion
  • Salt and freshly ground black pepper to taste
  • 4 slices bread
  • Butter, for spreading (optional)
  • Lettuce leaves (optional)

Instructions:

  1. Drain the tuna very well. Flake it gently with a fork in the mixing bowl.
  2. Add the mayonnaise, mango chutney, curry powder, and lemon juice to the tuna.
  3. Add the chopped apricots, toasted almonds, and red onion to the mixture.
  4. Season with salt and pepper to taste. Mix well to combine all ingredients. Taste and adjust seasonings as needed.
  5. Lightly butter the bread (if using). Spread the Tuna Coronation filling generously onto two slices of bread. Top with lettuce (if using).
  6. Top with the remaining bread slices. Slice in half (or quarters for tea sandwiches) and serve immediately.
