Ingredients:
- 2 (5 ounce/142g) cans tuna, drained well
- 1/2 cup (113g) mayonnaise
- 2 tablespoons mango chutney, finely chopped
- 1 tablespoon mild curry powder
- 1 tablespoon lemon juice
- 1/4 cup (40g) dried apricots, finely chopped
- 2 tablespoons toasted slivered almonds
- 2 tablespoons finely chopped red onion
- Salt and freshly ground black pepper to taste
- 4 slices bread
- Butter, for spreading (optional)
- Lettuce leaves (optional)
Instructions:
- Drain the tuna very well. Flake it gently with a fork in the mixing bowl.
- Add the mayonnaise, mango chutney, curry powder, and lemon juice to the tuna.
- Add the chopped apricots, toasted almonds, and red onion to the mixture.
- Season with salt and pepper to taste. Mix well to combine all ingredients. Taste and adjust seasonings as needed.
- Lightly butter the bread (if using). Spread the Tuna Coronation filling generously onto two slices of bread. Top with lettuce (if using).
- Top with the remaining bread slices. Slice in half (or quarters for tea sandwiches) and serve immediately.
