Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup (120ml) whole milk
  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 cup (240g) ripe bananas, mashed (about 2-3 bananas)
  • ½ cup (90g) chocolate chips or walnuts (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Grease or line a jumbo muffin tin with paper liners.
  3. In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, combine wet ingredients: eggs, milk, melted butter, vanilla extract, and mashed bananas.
  5. Gently fold the wet ingredients into the dry ingredients with a rubber spatula until just combined (do not overmix).
  6. If using, fold in chocolate chips or walnuts.
  7. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean and the tops are golden brown.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
