Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- ½ cup (120ml) whole milk
- ½ cup (115g) unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
- 1 cup (240g) ripe bananas, mashed (about 2-3 bananas)
- ½ cup (90g) chocolate chips or walnuts (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- Grease or line a jumbo muffin tin with paper liners.
- In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine wet ingredients: eggs, milk, melted butter, vanilla extract, and mashed bananas.
- Gently fold the wet ingredients into the dry ingredients with a rubber spatula until just combined (do not overmix).
- If using, fold in chocolate chips or walnuts.
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean and the tops are golden brown.
- Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
