Ingredients:

  • 1 lb / 450 g Cooked Chicken Breast, shredded
  • 1 stick / 113 g Unsalted Butter, cut into cubes
  • 1/2 cup / 120 ml Classic Frank’s RedHot Original Sauce (or preferred cayenne pepper sauce)
  • 1 tsp / 5 ml Apple Cider Vinegar
  • 1/2 cup / 120 g High-Quality Mayonnaise
  • 1/4 cup / 60 g Plain Greek Yogurt or Sour Cream
  • 1/4 cup / 60 g Crumbled Blue Cheese (Stilton or Gorgonzola)
  • 2 stalks Celery, finely diced
  • 2 tbsp / 30 g Red Onion, very finely minced
  • 1 tbsp / 15 ml Fresh Lemon Juice
  • 1 tbsp / 10 g Fresh Chives, finely snipped
  • 1 tsp / 5 g Dried Ranch Seasoning Mix (optional)
  • 1/2 tsp / 2 g Sea Salt
  • 1/4 tsp / 1 g Freshly Ground Black Pepper
  • Pinch Smoked Paprika

Instructions:

  1. Prepare the Chicken: Ensure chicken is completely cooled. Shred the 1 lb (450g) of cooked chicken using two forks or a stand mixer method, and place it into the large mixing bowl.
  2. Create the Buffalo Glaze: In a small saucepan, gently melt the 1 stick (113g) of butter over low heat. Remove from heat and immediately whisk in the 1/2 cup (120 ml) of Frank’s RedHot sauce and 1 tsp of apple cider vinegar until fully emulsified and glossy.
  3. Coat the Chicken: Pour the warm Buffalo glaze over the shredded chicken in the mixing bowl. Toss thoroughly until every piece of chicken is completely coated in the sauce. Set aside.
  4. Assemble the Dressing and Mix-Ins: In a separate small bowl, combine the mayonnaise, Greek yogurt/sour cream, lemon juice, chives, ranch seasoning (if using), smoked paprika, salt, and pepper. Whisk until smooth. Gently fold the crumbled blue cheese, diced celery, and minced red onion into this dressing mixture.
  5. Final Combination and Chill: Add the creamy dressing/mix-in mixture to the Buffalo-coated chicken. Fold gently until everything is evenly combined. Taste and adjust seasoning. Cover the bowl and refrigerate for a minimum of 30 minutes, allowing the flavors to integrate.
  6. Serve: Give the Buffalo Chicken Salad a final stir before serving in lettuce cups, wraps, or as a hearty sandwich filling.
