Ingredients:

  • 1 cup (240g) creamy peanut butter
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) brown sugar, packed
  • 1 large (50g) egg
  • 1 teaspoon (5g) vanilla extract
  • 1 cup (130g) all-purpose flour
  • 1 teaspoon (5g) baking soda
  • 1/4 teaspoon (1g) salt
  • 1/2 cup (90g) chocolate chips or chopped peanuts (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine peanut butter, granulated sugar, and brown sugar.
  3. Beat until creamy and well-combined using an electric mixer or whisk.
  4. Add the egg and vanilla extract; mix until smooth.
  5. In a separate bowl, whisk together flour, baking soda, and salt.
  6. Gradually add the dry mixture to the wet mixture, blending until just combined.
  7. Fold in optional chocolate chips or chopped peanuts, if using.
  8. Chill the dough in the refrigerator for 30 minutes to firm up.
  9. Transfer dough onto the prepared baking sheet. Shape into a large round cookie (about 10 inches in diameter).
  10. Bake for 15-20 minutes, until the edges are golden but the center is still soft.
  11. Cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
  12. Slice and serve warm or store in an airtight container.
