Ingredients:
- 1 cup (240g) creamy peanut butter
- 1/2 cup (100g) granulated sugar
- 1/2 cup (100g) brown sugar, packed
- 1 large (50g) egg
- 1 teaspoon (5g) vanilla extract
- 1 cup (130g) all-purpose flour
- 1 teaspoon (5g) baking soda
- 1/4 teaspoon (1g) salt
- 1/2 cup (90g) chocolate chips or chopped peanuts (optional)
Instructions:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine peanut butter, granulated sugar, and brown sugar.
- Beat until creamy and well-combined using an electric mixer or whisk.
- Add the egg and vanilla extract; mix until smooth.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, blending until just combined.
- Fold in optional chocolate chips or chopped peanuts, if using.
- Chill the dough in the refrigerator for 30 minutes to firm up.
- Transfer dough onto the prepared baking sheet. Shape into a large round cookie (about 10 inches in diameter).
- Bake for 15-20 minutes, until the edges are golden but the center is still soft.
- Cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve warm or store in an airtight container.
