Ingredients:
- 2 cups dried navy beans (350g)
- 4 cups water (950ml)
- 1 cup ketchup (240ml)
- ¼ cup brown sugar (50g)
- 2 tablespoons molasses (30ml)
- 1 tablespoon apple cider vinegar (15ml)
- 1 teaspoon mustard powder (5g)
- ½ teaspoon garlic powder (2g)
- ½ teaspoon onion powder (2g)
- 1 teaspoon smoked paprika (5g)
- Salt and black pepper to taste
- ½ cup chopped onion (optional, 80g)
- 1 strip diced bacon (optional, about 30g)
Instructions:
- Soak beans in water overnight or use the quick soak method (boil for 2 minutes, then let sit for 1 hour).
- Drain and rinse the soaked beans. Place in a large pot with 4 cups of fresh water and cook until tender (about 60 minutes).
- In a skillet over medium heat, sauté diced onion and bacon (if using) until bacon is crispy; remove excess fat.
- Combine ketchup, brown sugar, molasses, vinegar, mustard powder, garlic powder, onion powder, and smoked paprika in the skillet; stir until smooth.
- Preheat oven to 350°F (175°C).
- In a baking dish, mix cooked beans with sauce; season with salt and pepper.
- Bake uncovered for about 30-40 minutes until bubbly.
