Ingredients:

  • 2 cups cooked chicken breast or thighs, shredded
  • 1/2 cup chicken broth or water
  • 1/2 cup BBQ sauce
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 4 soft sandwich rolls or brioche buns
  • Optional: Sliced pickles, coleslaw, or shredded cheese for topping

Instructions:

  1. Submerge chicken in a pot with broth, bring to a boil, then reduce heat and simmer for 15-20 minutes until fully cooked.
  2. Remove chicken from the pot and let cool slightly. Shred the chicken into bite-sized pieces.
  3. In a mixing bowl, combine BBQ sauce, honey, apple cider vinegar, garlic powder, and smoked paprika. Mix well and season with salt and pepper.
  4. Add shredded chicken to the sauce mixture, stirring until well coated.
  5. Toast the sandwich rolls if desired. Pile the saucy shredded chicken onto the bottom half of each roll and top with pickles, coleslaw, or cheese.
