Ingredients:
- 2 cups cooked chicken breast or thighs, shredded
- 1/2 cup chicken broth or water
- 1/2 cup BBQ sauce
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 4 soft sandwich rolls or brioche buns
- Optional: Sliced pickles, coleslaw, or shredded cheese for topping
Instructions:
- Submerge chicken in a pot with broth, bring to a boil, then reduce heat and simmer for 15-20 minutes until fully cooked.
- Remove chicken from the pot and let cool slightly. Shred the chicken into bite-sized pieces.
- In a mixing bowl, combine BBQ sauce, honey, apple cider vinegar, garlic powder, and smoked paprika. Mix well and season with salt and pepper.
- Add shredded chicken to the sauce mixture, stirring until well coated.
- Toast the sandwich rolls if desired. Pile the saucy shredded chicken onto the bottom half of each roll and top with pickles, coleslaw, or cheese.
