Ingredients:

  • 1/3 cup balsamic vinegar
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 4 large Portobello mushrooms, stems removed

Instructions:

  1. In a mixing bowl, whisk together balsamic vinegar, olive oil, garlic, oregano, salt, and pepper until well combined.
  2. Place Portobello mushrooms in a zip-top bag or shallow dish and pour marinade over them. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes.
  3. Preheat the grill or grill pan to medium-high heat.
  4. Remove mushrooms from marinade, allowing excess to drip off. Grill for about 5-7 minutes on each side or until tender and grill marks appear, basting with leftover marinade as desired.
  5. Remove from grill, sprinkle with fresh parsley, and serve immediately.
