Ingredients:
- 1/2 cup white chia seeds
- 2 cups light coconut milk
- 2 tbsp pure maple syrup
- 1 tsp pure vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cardamom
- 1/8 tsp ground cloves
- 1/4 tsp sea salt
Instructions:
- Combine coconut milk, maple syrup, and the chai spice blend (cinnamon, ginger, cardamom, cloves, and salt) in a saucepan or microwave-safe bowl. Whisk vigorously until spices are fully integrated.
- Heat the mixture. Using a stovetop, heat over medium-low for 3–5 minutes until steaming. Using a microwave, heat on high for 90 seconds, stirring halfway through.
- Remove from heat and stir in the chia seeds and vanilla extract. Whisk for 1 full minute to ensure seeds are evenly distributed.
- Let the pudding sit for 5–10 minutes to allow the residual heat to accelerate thickening and create a creamy consistency.
