Ingredients:
- 2 cups fresh watermelon, cubed (approx. 300g)
- 1/2 cup granulated sugar (100g)
- 1/4 teaspoon sea salt
- 1 tablespoon lemon juice (15ml)
- 1/4 cup granulated sugar (50g) for dusting
Instructions:
- Remove the rind and seeds, then cube the watermelon.
- Place watermelon cubes in a blender and blend until smooth.
- Strain the juice into a medium saucepan, discarding the pulp.
- Add sugar, sea salt, and lemon juice to the pan and heat over medium until the sugar dissolves.
- Bring the mixture to a gentle simmer and cook for about 30-45 minutes, until thickened.
- Pour the mixture onto a parchment-lined baking sheet and spread evenly.
- Allow to cool at room temperature for about 30 minutes, then refrigerate until fully set (2-4 hours).
- Once set, cut into pieces and toss in sugar for coating.
- Store in an airtight container or serve immediately.
