Ingredients:

  • 2 cups fresh watermelon, cubed (approx. 300g)
  • 1/2 cup granulated sugar (100g)
  • 1/4 teaspoon sea salt
  • 1 tablespoon lemon juice (15ml)
  • 1/4 cup granulated sugar (50g) for dusting

Instructions:

  1. Remove the rind and seeds, then cube the watermelon.
  2. Place watermelon cubes in a blender and blend until smooth.
  3. Strain the juice into a medium saucepan, discarding the pulp.
  4. Add sugar, sea salt, and lemon juice to the pan and heat over medium until the sugar dissolves.
  5. Bring the mixture to a gentle simmer and cook for about 30-45 minutes, until thickened.
  6. Pour the mixture onto a parchment-lined baking sheet and spread evenly.
  7. Allow to cool at room temperature for about 30 minutes, then refrigerate until fully set (2-4 hours).
  8. Once set, cut into pieces and toss in sugar for coating.
  9. Store in an airtight container or serve immediately.
