Ingredients:
- 6 cups seedless watermelon, cubed into 1-inch pieces
- 1/2 cup low-fat feta cheese, crumbled
- 1/4 cup fresh mint leaves, torn by hand
- 2 tbsp fresh lime juice
- 1 tbsp extra-virgin olive oil
- 1/4 tsp flaky sea salt
- 1/8 tsp cracked black pepper
Instructions:
- Chill the watermelon for at least 4 hours before starting. Cube the chilled melon into uniform 1-inch squares, place them in a glass bowl, and let them sit for 5 minutes to drain any excess surface liquid.
- In a small jar or bowl, whisk together the lime juice, olive oil, sea salt, and black pepper until the mixture is opaque and well-combined.
- Drizzle the dressing over the watermelon cubes and use a rubber spatula to gently fold the fruit to coat.
- Add the crumbled feta and torn mint last, folding only 2-3 times to avoid bruising the mint or smearing the cheese.
