Ingredients:

  • 1/2 cup chia seeds
  • 2 cups unsweetened almond milk
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1 cup plain Greek yogurt
  • 2.5 cups fresh blueberries or sliced strawberries
  • 5 tbsp sliced almonds or pumpkin seeds

Instructions:

  1. In a medium mixing bowl, combine the chia seeds, almond milk, maple syrup, vanilla extract, and sea salt. Whisk vigorously for 60 seconds until the seeds are evenly suspended and no dry pockets remain.
  2. Fold in the Greek yogurt using a spatula. Stir until the mixture is a cohesive, pale cream color with streaks of yogurt throughout.
  3. Divide the mixture evenly among 5 mason jars. Seal the lids tightly and place them in the refrigerator. After 10 minutes, open each jar and stir once more to break up any seeds that have settled at the bottom.
  4. Allow the jars to chill for at least 4 hours or overnight. Just before serving or leaving for work, top each jar with fresh berries and sliced almonds.
