Ingredients:

  • 1 pound (450g) ground beef (80/20 or leaner)
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon (15ml) olive oil
  • 2 tablespoons (30ml) chili powder
  • 1 teaspoon (5ml) ground cumin
  • 1 teaspoon (5ml) smoked paprika
  • ½ teaspoon (2.5ml) garlic powder
  • ½ teaspoon (2.5ml) onion powder
  • ¼ teaspoon (1.25ml) dried oregano
  • ¼ teaspoon (1.25ml) cayenne pepper (optional, for heat)
  • ½ teaspoon (2.5ml) salt
  • ¼ teaspoon (1.25ml) black pepper
  • 12 corn or flour tortillas (6-inch diameter)
  • Shredded lettuce
  • Diced tomatoes
  • Shredded cheddar cheese (or Monterey Jack, Colby Jack)
  • Sour cream or Greek yogurt
  • Salsa (Mild, Medium, or Hot!)
  • Guacamole or sliced avocado
  • Pickled jalapeños
  • Chopped cilantro
  • Lime wedges

Instructions:

  1. Chop the onion and garlic. Gather your taco toppings and have them ready to go.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned. Drain off any excess grease.
  3. Add the chopped onion to the skillet with the browned beef and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the taco seasoning (either store-bought or homemade) and ½ cup (120ml) of water. Bring to a simmer and cook until the sauce has thickened slightly and the beef is coated in the seasoning, about 5-7 minutes.
  5. Warm the tortillas according to package instructions (e.g., in a dry skillet, microwave, or oven).
  6. Fill each tortilla with the seasoned ground beef and your desired toppings.
  7. Serve immediately with your favorite sides and enjoy!
