Ingredients:
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened (room temperature)
- 1 cup granulated sugar
- 1 large egg
- 2 tsp pure vanilla extract
- 1 vanilla bean, seeds scraped (or 2 tsp vanilla bean paste)
- 1/2 cup rainbow sprinkles (or your choice of colored sprinkles)
Instructions:
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, use an electric mixer to beat the softened butter and granulated sugar until light and fluffy (about 3 minutes).
- Add in the egg, pure vanilla extract, and scraped seeds from the vanilla bean. Mix until well combined.
- Gradually add the dry ingredient mixture into the wet ingredients. Mix on low speed until just combined; do not overmix.
- Gently fold in half of the rainbow sprinkles into the cookie dough using a spatula or wooden spoon.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto prepared baking sheets about 2 inches apart. Press down lightly on each ball to flatten slightly.
- Sprinkle additional rainbow sprinkles on top of each cookie before baking for extra color!
- Bake cookies in preheated oven for about 10–12 minutes, or until edges are lightly golden but centers are still soft.
- Remove from oven; let cookies cool on baking sheets for about five minutes before transferring them to wire racks to cool completely.
