Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened (room temperature)
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp pure vanilla extract
  • 1 vanilla bean, seeds scraped (or 2 tsp vanilla bean paste)
  • 1/2 cup rainbow sprinkles (or your choice of colored sprinkles)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, use an electric mixer to beat the softened butter and granulated sugar until light and fluffy (about 3 minutes).
  4. Add in the egg, pure vanilla extract, and scraped seeds from the vanilla bean. Mix until well combined.
  5. Gradually add the dry ingredient mixture into the wet ingredients. Mix on low speed until just combined; do not overmix.
  6. Gently fold in half of the rainbow sprinkles into the cookie dough using a spatula or wooden spoon.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto prepared baking sheets about 2 inches apart. Press down lightly on each ball to flatten slightly.
  8. Sprinkle additional rainbow sprinkles on top of each cookie before baking for extra color!
  9. Bake cookies in preheated oven for about 10–12 minutes, or until edges are lightly golden but centers are still soft.
  10. Remove from oven; let cookies cool on baking sheets for about five minutes before transferring them to wire racks to cool completely.
