Ingredients:
- 1 cup unsalted butter, softened (226 g)
- 1 cup granulated sugar (200 g)
- 1 cup packed brown sugar (220 g)
- 2 large eggs
- 2 teaspoons vanilla extract (10 ml)
- 3 cups all-purpose flour (360 g)
- 1 teaspoon baking powder (5 g)
- 1 teaspoon baking soda (5 g)
- ½ teaspoon salt (3 g)
- 1 teaspoon peppermint extract (5 ml)
- 8-10 York Peppermint Patties, chopped (optional for topping)
- ½ cup semi-sweet chocolate chips (90 g)
Instructions:
- Preheat the oven to 350°F (175°C).
- Line a 9x13-inch baking pan with parchment paper for easy removal.
- Cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
- Add the eggs, one at a time, mixing until incorporated; then mix in the vanilla and peppermint extracts.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chopped York Peppermint Patties and mini chocolate chips.
- Spread the dough evenly in the prepared pan.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Cool completely in the pan on a wire rack before cutting into bars.
