Ingredients:

  • 1 cup unsalted butter, softened (226 g)
  • 1 cup granulated sugar (200 g)
  • 1 cup packed brown sugar (220 g)
  • 2 large eggs
  • 2 teaspoons vanilla extract (10 ml)
  • 3 cups all-purpose flour (360 g)
  • 1 teaspoon baking powder (5 g)
  • 1 teaspoon baking soda (5 g)
  • ½ teaspoon salt (3 g)
  • 1 teaspoon peppermint extract (5 ml)
  • 8-10 York Peppermint Patties, chopped (optional for topping)
  • ½ cup semi-sweet chocolate chips (90 g)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Line a 9x13-inch baking pan with parchment paper for easy removal.
  3. Cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  4. Add the eggs, one at a time, mixing until incorporated; then mix in the vanilla and peppermint extracts.
  5. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the chopped York Peppermint Patties and mini chocolate chips.
  8. Spread the dough evenly in the prepared pan.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool completely in the pan on a wire rack before cutting into bars.
