Ingredients:
- 1 cup (120g) all-purpose flour
- 1/4 cup (30g) powdered sugar
- 1/2 cup (113g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 2 tablespoons all-purpose flour
- 1/2 cup (120ml) fresh lemon juice (about 2-3 lemons)
- Zest of 1 lemon
Instructions:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour and powdered sugar.
- Cut in softened butter until crumbly and evenly mixed.
- Press mixture into the bottom of the prepared baking dish.
- Pre-bake the crust for 15 minutes or until lightly golden.
- In a bowl, whisk together granulated sugar, eggs, and flour until smooth.
- Stir in lemon juice and lemon zest until fully incorporated.
- Pour the filling over the pre-baked crust.
- Bake for an additional 20-25 minutes until the filling is set.
- Allow bars to cool in the pan on a wire rack. Refrigerate for at least 30 minutes before slicing into squares.
