Ingredients:
- 1 ½ cups (192g) all-purpose flour, plus more for dusting
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup (113g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs
- ¼ cup (60ml) sour cream, or plain Greek yogurt
- ¼ cup (60ml) milk
- 2 tablespoons lemon zest (from about 2 lemons)
- 2 tablespoons lemon juice
- ¼ cup (60ml) lemon juice
- ½ cup (60g) powdered sugar, sifted
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour the loaf pan.
- Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
- In a large bowl, cream together softened butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in lemon zest.
- Gradually add dry ingredients to wet ingredients, alternating with sour cream/yogurt and milk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix!
- Pour batter into prepared loaf pan and spread evenly. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean (or with a few moist crumbs).
- Let bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- While bread is cooling, whisk together lemon juice and powdered sugar until smooth.
- Once bread is completely cool, slowly drizzle the lemon glaze over the top. Let the glaze set before slicing and serving. This simple lemon bread is a crowd pleaser!
