Ingredients:
- 2 (6 oz/170g each) salmon fillets, skin on or off, pin bones removed
- 2 tablespoons/30ml olive oil, extra virgin
- 1 large lemon, zested and juiced (about 2 tablespoons/30ml juice)
- 2 teaspoons freshly cracked black pepper
- 1 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1 tablespoon fresh parsley, chopped (for garnish, optional)
Instructions:
- In a small bowl, combine olive oil, lemon zest, lemon juice, black pepper, salt, and garlic powder. Whisk well to combine.
- Place salmon fillets in a shallow dish or resealable bag. Pour the marinade over the salmon, ensuring both sides are coated. Marinate in the refrigerator for at least 15 minutes, or up to 30 minutes.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- Place marinated salmon fillets on the prepared baking sheet. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Internal temperature should reach 145°F (63°C).
- Garnish with fresh chopped parsley (if using). Serve immediately.
