Ingredients:

  • 2 (6 oz/170g each) salmon fillets, skin on or off, pin bones removed
  • 2 tablespoons/30ml olive oil, extra virgin
  • 1 large lemon, zested and juiced (about 2 tablespoons/30ml juice)
  • 2 teaspoons freshly cracked black pepper
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1 tablespoon fresh parsley, chopped (for garnish, optional)

Instructions:

  1. In a small bowl, combine olive oil, lemon zest, lemon juice, black pepper, salt, and garlic powder. Whisk well to combine.
  2. Place salmon fillets in a shallow dish or resealable bag. Pour the marinade over the salmon, ensuring both sides are coated. Marinate in the refrigerator for at least 15 minutes, or up to 30 minutes.
  3. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  4. Place marinated salmon fillets on the prepared baking sheet. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Internal temperature should reach 145°F (63°C).
  5. Garnish with fresh chopped parsley (if using). Serve immediately.
