Ingredients:

  • ¼ cup (60ml) rice vinegar
  • 2 tablespoons (30ml) soy sauce (low-sodium preferred)
  • 2 tablespoons (30ml) toasted sesame oil
  • 2 tablespoons (30ml) honey or maple syrup
  • 1 tablespoon (15ml) grated fresh ginger
  • 1 clove garlic, minced
  • 1 tablespoon (15ml) water
  • 1 teaspoon sesame seeds
  • ½ teaspoon ground black pepper
  • ¼ teaspoon red pepper flakes (optional, for a touch of heat)

Instructions:

  1. In a mixing bowl or jar, add rice vinegar, soy sauce, sesame oil, honey (or maple syrup), ginger, garlic, water, sesame seeds, black pepper, and red pepper flakes (if using).
  2. Whisk vigorously until all ingredients are well combined and emulsified. Alternatively, seal the jar tightly with a lid and shake until emulsified.
  3. Taste the dressing and adjust seasoning as needed. Add more honey for sweetness, vinegar for tanginess, or soy sauce for saltiness.
  4. Use immediately or store in an airtight container in the refrigerator for up to 5 days. Shake well before using, as the dressing may separate upon standing.
