Ingredients:
- 1.5 lbs Zucchini, about 2 medium (680g)
- 2 tablespoons Olive Oil (30ml)
- 2 cloves Garlic, minced (approx. 6g)
- Salt and freshly ground Black Pepper, to taste
- 1/4 cup freshly grated Parmesan Cheese (25g)
- Pinch of Red Pepper Flakes (optional)
Instructions:
- Wash and trim the ends off the zucchini. Slice into 1/4-inch thick rounds or half-moons if the zucchini are large.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant, being careful not to burn it.
- Add the sliced zucchini to the skillet. Season with salt, pepper, and red pepper flakes (if using).
- Sauté the zucchini, stirring occasionally, for about 5-7 minutes, or until tender-crisp and lightly browned.
- Remove the skillet from the heat. Sprinkle the grated Parmesan cheese over the zucchini.
- Serve immediately, while the cheese is still melted and gooey.
