Ingredients:

  • 1.5 lbs Zucchini, about 2 medium (680g)
  • 2 tablespoons Olive Oil (30ml)
  • 2 cloves Garlic, minced (approx. 6g)
  • Salt and freshly ground Black Pepper, to taste
  • 1/4 cup freshly grated Parmesan Cheese (25g)
  • Pinch of Red Pepper Flakes (optional)

Instructions:

  1. Wash and trim the ends off the zucchini. Slice into 1/4-inch thick rounds or half-moons if the zucchini are large.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant, being careful not to burn it.
  3. Add the sliced zucchini to the skillet. Season with salt, pepper, and red pepper flakes (if using).
  4. Sauté the zucchini, stirring occasionally, for about 5-7 minutes, or until tender-crisp and lightly browned.
  5. Remove the skillet from the heat. Sprinkle the grated Parmesan cheese over the zucchini.
  6. Serve immediately, while the cheese is still melted and gooey.
