Ingredients:
- 1 3/4 cups (210g) all-purpose flour, plus more for dusting
- 1 teaspoon (5g) baking soda
- 1/2 teaspoon (2.5g) baking powder
- 1/2 teaspoon (2.5g) ground cinnamon
- 1/4 teaspoon (1.25g) salt
- 1 large egg
- 1/2 cup (120ml) unsweetened applesauce
- 1/4 cup (60ml) honey
- 1/4 cup (60ml) vegetable oil (such as canola or sunflower)
- 1 teaspoon (5ml) vanilla extract
- 2 cups (240g) grated zucchini, lightly packed (about 2 medium zucchini)
Instructions:
- Preheat oven to 375°F (190°C). Line muffin tin with liners or grease well.
- Whisk together flour, baking soda, baking powder, cinnamon, and salt in a large bowl.
- In a separate bowl, whisk egg, applesauce, honey, oil, and vanilla extract.
- Gently fold wet ingredients into dry ingredients until just combined. Do not overmix!
- Fold in the grated zucchini.
- Fill muffin cups about 2/3 full using an ice cream scoop or spoon.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the muffin tin for a few minutes, then transfer to a wire rack to cool completely.
