Ingredients:

  • 1 3/4 cups (210g) all-purpose flour, plus more for dusting
  • 1 teaspoon (5g) baking soda
  • 1/2 teaspoon (2.5g) baking powder
  • 1/2 teaspoon (2.5g) ground cinnamon
  • 1/4 teaspoon (1.25g) salt
  • 1 large egg
  • 1/2 cup (120ml) unsweetened applesauce
  • 1/4 cup (60ml) honey
  • 1/4 cup (60ml) vegetable oil (such as canola or sunflower)
  • 1 teaspoon (5ml) vanilla extract
  • 2 cups (240g) grated zucchini, lightly packed (about 2 medium zucchini)

Instructions:

  1. Preheat oven to 375°F (190°C). Line muffin tin with liners or grease well.
  2. Whisk together flour, baking soda, baking powder, cinnamon, and salt in a large bowl.
  3. In a separate bowl, whisk egg, applesauce, honey, oil, and vanilla extract.
  4. Gently fold wet ingredients into dry ingredients until just combined. Do not overmix!
  5. Fold in the grated zucchini.
  6. Fill muffin cups about 2/3 full using an ice cream scoop or spoon.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the muffin tin for a few minutes, then transfer to a wire rack to cool completely.
