Apple Butter and Cheese Kolaches

Ingredients

  • 1 cup (228 grams) full fat Greek yogurt, resting at room temperature for 30 minutes
  • 1/2 cup (100 grams) granulated sugar
  • 1 1/2 teaspoons kosher salt
  • 8 tablespoons (113 grams) unsalted butter, melted
  • 2 1/4 teaspoons instant yeast
  • 1/2 cup (113 grams) warm water
  • 2 large eggs
  • 4 cups (485 grams) all-purpose flour, plus more for dusting
  • 1 heaping cup great quality apple butter
  • 8 ounces cream cheese, softened
  • 1 large egg (for filling)
  • 1/3 cup (35 grams) powdered sugar
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon vanilla bean paste
  • 3/4 cup (90 grams) all-purpose flour (for crumble topping)
  • 3/4 cup (175 grams) granulated sugar (for crumble topping)
  • 6 tablespoons (85 grams) unsalted butter, melted (for crumble topping)

Instructions

  1. To make the dough, whisk together yogurt, sugar, and salt in a medium bowl. Melt the butter and whisk it into the yogurt mixture.
  2. In a stand mixer fitted with a dough hook, combine flour, yeast, warm water, and eggs. Add the yogurt mixture and mix until combined.
  3. Knead the mixture on low speed for about 5 minutes. The dough should be tacky but pull away from the sides of the bowl. Add more flour if necessary, but keep it sticky.
  4. Transfer the dough to a greased bowl, cover with plastic wrap, and refrigerate overnight.
  5. Prepare the cheese filling by beating all filling ingredients until smooth, then refrigerate.
  6. Make the crumble topping by combining all ingredients into a sandy mixture and refrigerate.
  7. The next day, divide the dough into about 20 pieces (1 3/4 ounces each). Shape each piece into a ball and place on greased or parchment-lined sheet pans.
  8. Flatten each ball to about 1/2 inch thick, cover with oiled plastic wrap, and let rest for 10 minutes.
  9. Make a deep indentation in the center of each flattened ball. Fill each with about 1 tablespoon of cheese filling and 1 tablespoon of apple butter, then sprinkle with crumble topping.
  10. Cover and let the kolaches rise for about 45 minutes.
  11. Bake in a preheated 350°F (175°C) oven for 15-20 minutes, or until golden brown.
  12. Serve warm or at room temperature. Store leftovers in an airtight container at room temperature or freeze for longer storage.
