Green Goddess Sandwich

A delicious and fresh sandwich featuring a creamy salad with crunchy vegetables, perfect for lunch!

Ingredients

  • 3 tablespoons Duke s mayonnaise
  • 2 teaspoons red wine vinegar
  • 1/4 cup very thinly sliced red onion
  • 1/4 cup pickled banana peppers
  • 1 teaspoon dried oregano
  • Generous sprinkle of garlic powder, sea salt, and black pepper
  • 3 heaping cups shredded iceberg lettuce
  • Thick sliced seeded bread
  • Duke s mayonnaise (for spreading)
  • Sliced Havarti cheese
  • Ripe avocado, sliced thin
  • English cucumber, thinly sliced
  • Green heirloom tomato, sliced

Instructions

  1. In a medium bowl, whisk together mayonnaise, red wine vinegar, red onion, pickled banana peppers, dried oregano, garlic powder, sea salt, and black pepper until well combined.
  2. Add the shredded iceberg lettuce to the bowl and toss to coat evenly with the dressing.
  3. For the sandwiches, lightly toast the thick slices of seeded bread if desired.
  4. Spread a thin layer of Duke s mayonnaise on each slice of bread.
  5. Place a slice of Havarti cheese on each slice of bread.
  6. On one slice, layer the avocado slices, cucumber slices, and green heirloom tomato slices.
  7. Top this with a generous mound of the prepared iceberg lettuce salad.
  8. Close the sandwich with the other slice of bread and wrap tightly in parchment paper.
  9. Refrigerate until ready to serve, then slice in half (through the paper) to enjoy!
