Ingredients:

  • 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed)
  • 1 cup feta cheese, crumbled
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • Salt and black pepper to taste
  • A pinch of nutmeg for extra flavor (optional)
  • 1 sheet puff pastry (thawed if frozen)
  • 1 egg (for egg wash)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, add a splash of olive oil.
  3. Sauté the onion until translucent.
  4. Add minced garlic and cook for another minute until fragrant.
  5. If using fresh spinach
  6. Remove from heat and let cool slightly.
  7. In a mixing bowl, combine the sautéed mixture with feta cheese, ricotta cheese, Parmesan cheese, salt, black pepper, and nutmeg if desired. Mix well until fully combined.
  8. Roll out the puff pastry on a lightly floured surface into a rectangle about \(¼\) inch thick.
  9. Place about one tablespoon of filling in the center of each pastry square.
  10. Fold over diagonally to create triangles or fold edges over to form rectangles; ensure that filling is sealed inside by pressing edges together firmly with fingers or fork.
