Ingredients:
- 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed)
- 1 cup feta cheese, crumbled
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- Salt and black pepper to taste
- A pinch of nutmeg for extra flavor (optional)
- 1 sheet puff pastry (thawed if frozen)
- 1 egg (for egg wash)
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, add a splash of olive oil.
- Sauté the onion until translucent.
- Add minced garlic and cook for another minute until fragrant.
- If using fresh spinach
- Remove from heat and let cool slightly.
- In a mixing bowl, combine the sautéed mixture with feta cheese, ricotta cheese, Parmesan cheese, salt, black pepper, and nutmeg if desired. Mix well until fully combined.
- Roll out the puff pastry on a lightly floured surface into a rectangle about \(¼\) inch thick.
- Place about one tablespoon of filling in the center of each pastry square.
- Fold over diagonally to create triangles or fold edges over to form rectangles; ensure that filling is sealed inside by pressing edges together firmly with fingers or fork.
