Ingredients:
- 3 tbsp chia seeds
- 1 cup unsweetened almond milk
- 1 tsp pure vanilla extract
- 1 tbsp maple syrup
- 1/2 cup fresh raspberries
- 1/2 cup fresh blueberries
- 1 tsp lemon juice
- 1 tsp honey
- 1/2 cup plain Greek yogurt
- 1 pinch cinnamon
Instructions:
- Combine the chia seeds, almond milk, vanilla, and maple syrup in a jar. Whisk vigorously for 60 seconds.
- Let the mixture sit for 5 minutes, then whisk a second time to break up hydrated clumps. Cover and refrigerate for at least 2 hours.
- In a small bowl, combine raspberries, blueberries, lemon juice, and honey. Mash with a fork until the berries release their juices but retain some chunky texture.
- Assemble the parfait by smoothing the chilled chia pudding at the bottom of the jar.
- Spoon a layer of Greek yogurt over the chia pudding.
- Top with the mashed berry mixture, a few whole blueberries, and a sprinkle of cinnamon.
