Ingredients:

  • 1 cup unsweetened almond milk
  • 1 tsp pure vanilla extract
  • 1 tbsp maple syrup
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blueberries
  • 1 tsp lemon juice
  • 1 tsp honey
  • 1/2 cup plain Greek yogurt
  • 1 pinch cinnamon

Instructions:

  1. Combine the chia seeds, almond milk, vanilla, and maple syrup in a jar. Whisk vigorously for 60 seconds.
  2. Let the mixture sit for 5 minutes, then whisk a second time to break up hydrated clumps. Cover and refrigerate for at least 2 hours.
  3. In a small bowl, combine raspberries, blueberries, lemon juice, and honey. Mash with a fork until the berries release their juices but retain some chunky texture.
  4. Assemble the parfait by smoothing the chilled chia pudding at the bottom of the jar.
  5. Spoon a layer of Greek yogurt over the chia pudding.
  6. Top with the mashed berry mixture, a few whole blueberries, and a sprinkle of cinnamon.
