Ingredients:

  • 1 cup (226g) unsalted butter, softened
  • 1 cup (220g) brown sugar, packed
  • 2 cups (240g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the softened butter and brown sugar together until light and fluffy.
  3. Gradually add the all-purpose flour and salt to the butter mixture. Mix until a soft dough forms.
  4. Stir in the vanilla extract until evenly distributed.
  5. Wrap the dough in plastic wrap and refrigerate for 30 minutes to firm up.
  6. Roll out the chilled dough on a lightly floured surface to about 1/4 inch thickness. Use a cookie cutter or knife to cut out cookies.
  7. Transfer cookies to the prepared baking sheet, spacing them about 1 inch apart. Bake for 12-15 minutes, or until the edges are lightly golden.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Store in an airtight container.
