Ingredients:
- 1 large head of cauliflower (approximately 2 lbs / 900g), outer leaves removed
- 2 tablespoons olive oil (30ml)
- 1 teaspoon garlic powder (5ml)
- 1/2 teaspoon smoked paprika (2.5ml)
- 1/4 teaspoon salt (1.25ml)
- 1/4 teaspoon black pepper (1.25ml)
- 2 tablespoons olive oil (30ml)
- 2 tablespoons fresh lemon juice (30ml), from about 1 lemon
- 1 tablespoon chopped fresh parsley (15ml)
- 1 tablespoon chopped fresh chives (15ml)
- 1/2 teaspoon lemon zest (2.5ml)
- Pinch of red pepper flakes (optional)
Instructions:
- Cut the cauliflower into approximately 1-inch thick steaks from the centre of the head. Reserve the florets for another use.
- In a small bowl, whisk together olive oil, garlic powder, smoked paprika, salt, and pepper.
- Brush the marinade generously onto both sides of the cauliflower steaks.
- Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled.
- Place the cauliflower steaks on the grill. Cook for about 5-7 minutes per side, or until tender and slightly charred.
- While the cauliflower is grilling, whisk together olive oil, lemon juice, parsley, chives, lemon zest, and red pepper flakes (if using) in a small bowl.
- Transfer the grilled cauliflower steaks to a serving platter and drizzle generously with the lemon-herb sauce. Serve immediately.
