Ingredients:

  • 1 large head of cauliflower (approximately 2 lbs / 900g), outer leaves removed
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon garlic powder (5ml)
  • 1/2 teaspoon smoked paprika (2.5ml)
  • 1/4 teaspoon salt (1.25ml)
  • 1/4 teaspoon black pepper (1.25ml)
  • 2 tablespoons olive oil (30ml)
  • 2 tablespoons fresh lemon juice (30ml), from about 1 lemon
  • 1 tablespoon chopped fresh parsley (15ml)
  • 1 tablespoon chopped fresh chives (15ml)
  • 1/2 teaspoon lemon zest (2.5ml)
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Cut the cauliflower into approximately 1-inch thick steaks from the centre of the head. Reserve the florets for another use.
  2. In a small bowl, whisk together olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Brush the marinade generously onto both sides of the cauliflower steaks.
  4. Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled.
  5. Place the cauliflower steaks on the grill. Cook for about 5-7 minutes per side, or until tender and slightly charred.
  6. While the cauliflower is grilling, whisk together olive oil, lemon juice, parsley, chives, lemon zest, and red pepper flakes (if using) in a small bowl.
  7. Transfer the grilled cauliflower steaks to a serving platter and drizzle generously with the lemon-herb sauce. Serve immediately.
