Ingredients:

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 2 tbsp avocado oil
  • 4 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 tbsp fresh parsley, chopped
  • 1/4 tsp red pepper flakes

Instructions:

  1. Pat the steak cubes completely dry with paper towels and toss them in a bowl with salt and pepper.
  2. Heat avocado oil in a cast iron skillet over high heat until it begins to smoke. Add steak bites in a single layer, searing for 2 minutes without moving, then toss for another 2-3 minutes until browned on all sides. Remove steak to a plate.
  3. Reduce heat to medium. Melt butter in the same pan, scraping up the brown bits. Add minced garlic and red pepper flakes and sauté for 1 minute until fragrant.
  4. Stir in heavy cream and simmer for 2 minutes until slightly thickened.
  5. Turn heat to low and whisk in the parmesan cheese until melted and smooth.
  6. Return the steak bites and any juices to the pan. Toss for 30 seconds until glazed in the sauce and garnish with fresh parsley.
