Ingredients:
- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 2 tbsp avocado oil
- 4 tbsp unsalted butter
- 5 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 tbsp fresh parsley, chopped
- 1/4 tsp red pepper flakes
Instructions:
- Pat the steak cubes completely dry with paper towels and toss them in a bowl with salt and pepper.
- Heat avocado oil in a cast iron skillet over high heat until it begins to smoke. Add steak bites in a single layer, searing for 2 minutes without moving, then toss for another 2-3 minutes until browned on all sides. Remove steak to a plate.
- Reduce heat to medium. Melt butter in the same pan, scraping up the brown bits. Add minced garlic and red pepper flakes and sauté for 1 minute until fragrant.
- Stir in heavy cream and simmer for 2 minutes until slightly thickened.
- Turn heat to low and whisk in the parmesan cheese until melted and smooth.
- Return the steak bites and any juices to the pan. Toss for 30 seconds until glazed in the sauce and garnish with fresh parsley.
