Ingredients:
- 8 oz plain goat cheese
- 2 tbsp heavy cream
- 1 tsp extra virgin olive oil
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp fresh chives, finely chopped
- 1 tsp fresh thyme leaves
- 1 clove garlic, minced
- 1 tsp lemon zest
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions:
- Allow the goat cheese to sit at room temperature for 30–60 minutes, or place the sealed log in warm water for 10 minutes until soft.
- Place the softened goat cheese in a mixing bowl and add heavy cream and olive oil. Fold and mash with a spatula until smooth and glossy.
- Stir in the minced garlic, lemon zest, parsley, chives, and thyme. Gently fold in the herbs and season with salt and pepper.
- Transfer the mixture to a serving bowl or shape into a rustic log on a platter. Create swirls on top with the back of a spoon for presentation.
