Ingredients:

  • 8 oz plain goat cheese
  • 2 tbsp heavy cream
  • 1 tsp extra virgin olive oil
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tsp fresh thyme leaves
  • 1 clove garlic, minced
  • 1 tsp lemon zest
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Allow the goat cheese to sit at room temperature for 30–60 minutes, or place the sealed log in warm water for 10 minutes until soft.
  2. Place the softened goat cheese in a mixing bowl and add heavy cream and olive oil. Fold and mash with a spatula until smooth and glossy.
  3. Stir in the minced garlic, lemon zest, parsley, chives, and thyme. Gently fold in the herbs and season with salt and pepper.
  4. Transfer the mixture to a serving bowl or shape into a rustic log on a platter. Create swirls on top with the back of a spoon for presentation.
