Ingredients:

  • 8 ounces sharp cheddar cheese, freshly grated
  • 4 ounces cream cheese, softened
  • ½ cup mayonnaise (Duke's preferred)
  • 4 ounces jarred pimentos, drained and finely diced
  • 2 ounces fire-roasted red peppers, drained and finely diced
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon black pepper
  • Pinch of salt

Instructions:

  1. Grate the cheddar using a box grater. Freshly grated cheese melts better and tastes better.
  2. In a large mixing bowl, combine the grated cheddar cheese, softened cream cheese, mayonnaise, pimentos, fire-roasted red peppers, Worcestershire sauce, garlic powder, cayenne pepper, black pepper, and salt.
  3. Use a rubber spatula to mix all ingredients until well combined and creamy. Be gentle and don't overmix.
  4. Taste the pimento cheese and adjust seasoning as needed. Add more cayenne for more heat, or a pinch more salt if needed.
  5. Cover the bowl with plastic wrap and chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled with your favorite crackers, vegetables, or bread.
