Ingredients:
- 8 ounces sharp cheddar cheese, freshly grated
- 4 ounces cream cheese, softened
- ½ cup mayonnaise (Duke's preferred)
- 4 ounces jarred pimentos, drained and finely diced
- 2 ounces fire-roasted red peppers, drained and finely diced
- 1 tablespoon Worcestershire sauce
- ½ teaspoon garlic powder
- ¼ teaspoon cayenne pepper
- ¼ teaspoon black pepper
- Pinch of salt
Instructions:
- Grate the cheddar using a box grater. Freshly grated cheese melts better and tastes better.
- In a large mixing bowl, combine the grated cheddar cheese, softened cream cheese, mayonnaise, pimentos, fire-roasted red peppers, Worcestershire sauce, garlic powder, cayenne pepper, black pepper, and salt.
- Use a rubber spatula to mix all ingredients until well combined and creamy. Be gentle and don't overmix.
- Taste the pimento cheese and adjust seasoning as needed. Add more cayenne for more heat, or a pinch more salt if needed.
- Cover the bowl with plastic wrap and chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Serve chilled with your favorite crackers, vegetables, or bread.
