Ingredients:
- 1.5 cups (180g) graham cracker crumbs
- 6 tbsp (85g) unsalted butter, melted
- 2 tbsp (25g) granulated sugar
- 0.25 tsp (1.5g) salt
- 16 oz (450g) full-fat cream cheese, softened
- 1 cup (120g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1.5 cups (360ml) heavy whipping cream, chilled
- 0.5 cup (85g) semi-sweet chocolate chips, melted and cooled
- 2 cups (300g) mini marshmallows
- 2 tbsp (30g) shaved chocolate
Instructions:
- Combine graham cracker crumbs, melted butter, sugar, and salt in a medium bowl until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan using the bottom of a flat measuring cup, ensuring edges are tightly packed.
- Place the pan in the freezer for 10 minutes to flash-set the crust.
- Beat the softened cream cheese and powdered sugar on medium-high speed until smooth and free of lumps.
- Stir in the vanilla extract and the cooled, melted chocolate until the filling is a uniform mahogany-chocolate hue.
- In a separate chilled bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the chocolate cream cheese mixture using a spatula with a slow over-and-under motion.
- Spread the filling evenly over the chilled crust and smooth the top.
- Top the cheesecake with mini marshmallows and refrigerate for at least 6 hours to set.
- Before serving, use a kitchen torch to toast the marshmallows until browned and garnish with shaved chocolate.
