Ingredients:
- 1 cup (225g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1/4 cup (50g) packed light brown sugar
- 1 tsp (5ml) pure vanilla extract
- 1/4 tsp (1.5g) salt
- 2 1/4 cups (280g) all-purpose flour
- 1 cup (115g) pecans, finely chopped
- 2 tbsp (25g) granulated sugar
Instructions:
- Preheat oven to 350°F (175°C). Spread chopped pecans on a tray and toast for 5–7 minutes until fragrant and golden. Let pecans cool completely.
- In a large bowl, beat softened butter, granulated sugar, and brown sugar on medium-high for 2–3 minutes until pale and fluffy.
- Mix in the vanilla extract and salt.
- Gradually add the flour on the lowest mixer setting, stopping the instant the flour disappears.
- Use a spatula to fold in the toasted pecans by hand.
- Scoop 1-tablespoon portions and roll into smooth balls.
- Roll each ball lightly in the finishing sugar and place on parchment-lined sheets 2 inches apart.
- Bake for 10–12 minutes until edges are barely golden.
