Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) packed light brown sugar
  • 1 tsp (5ml) pure vanilla extract
  • 1/4 tsp (1.5g) salt
  • 2 1/4 cups (280g) all-purpose flour
  • 1 cup (115g) pecans, finely chopped
  • 2 tbsp (25g) granulated sugar

Instructions:

  1. Preheat oven to 350°F (175°C). Spread chopped pecans on a tray and toast for 5–7 minutes until fragrant and golden. Let pecans cool completely.
  2. In a large bowl, beat softened butter, granulated sugar, and brown sugar on medium-high for 2–3 minutes until pale and fluffy.
  3. Mix in the vanilla extract and salt.
  4. Gradually add the flour on the lowest mixer setting, stopping the instant the flour disappears.
  5. Use a spatula to fold in the toasted pecans by hand.
  6. Scoop 1-tablespoon portions and roll into smooth balls.
  7. Roll each ball lightly in the finishing sugar and place on parchment-lined sheets 2 inches apart.
  8. Bake for 10–12 minutes until edges are barely golden.
