Ingredients:

  • 115g unsalted butter, melted and cooled
  • 150g granulated sugar
  • 2 large eggs
  • 5ml vanilla extract
  • 2.5ml almond extract
  • 96g almond flour
  • 125g all-purpose flour
  • 7g baking powder
  • 1.5g salt
  • 3 medium pears, peeled, cored, and sliced
  • 30ml melted butter
  • 25g icing sugar
  • 1.25g ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (180°C).
  2. Grease a 9-inch springform pan with butter and line the bottom with a circle of parchment paper.
  3. Peel, core, and thinly slice the pears into 3mm-thick wedges. Toss them gently in melted butter and cinnamon.
  4. In a large bowl, whisk together the melted butter and granulated sugar.
  5. Add eggs one by one, whisking vigorously until the mixture is pale and slightly thickened. Stir in the vanilla and almond extracts.
  6. Sift the almond flour, all-purpose flour, baking powder, and salt directly into the wet ingredients.
  7. Use a spatula to fold the ingredients together just until no streaks of flour remain.
  8. Pour the batter into the prepared pan and smooth the top with a spatula.
  9. Arrange the pear slices in a concentric circle on top of the batter, pressing them in very lightly.
  10. Bake for 45 minutes until the exterior is mahogany-colored and a tester comes out clean.
  11. Allow the cake to cool slightly before dusting with icing sugar.
