Ingredients:
- 115g unsalted butter, melted and cooled
- 150g granulated sugar
- 2 large eggs
- 5ml vanilla extract
- 2.5ml almond extract
- 96g almond flour
- 125g all-purpose flour
- 7g baking powder
- 1.5g salt
- 3 medium pears, peeled, cored, and sliced
- 30ml melted butter
- 25g icing sugar
- 1.25g ground cinnamon
Instructions:
- Preheat your oven to 350°F (180°C).
- Grease a 9-inch springform pan with butter and line the bottom with a circle of parchment paper.
- Peel, core, and thinly slice the pears into 3mm-thick wedges. Toss them gently in melted butter and cinnamon.
- In a large bowl, whisk together the melted butter and granulated sugar.
- Add eggs one by one, whisking vigorously until the mixture is pale and slightly thickened. Stir in the vanilla and almond extracts.
- Sift the almond flour, all-purpose flour, baking powder, and salt directly into the wet ingredients.
- Use a spatula to fold the ingredients together just until no streaks of flour remain.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Arrange the pear slices in a concentric circle on top of the batter, pressing them in very lightly.
- Bake for 45 minutes until the exterior is mahogany-colored and a tester comes out clean.
- Allow the cake to cool slightly before dusting with icing sugar.
