Ingredients:
- 1.5 cups pumpkin puree
- 1 cup granulated sugar
- 0.5 cup vegetable oil
- 2 large eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 0.25 tsp ground nutmeg
- 0.25 tsp ground cloves
- 0.5 tsp salt
- 1 cup powdered sugar
- 1 tbsp pumpkin puree
- 2 tbsp milk
- 0.5 tsp vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C) and grease two 8x4 inch loaf pans.
- In a large bowl, whisk together the pumpkin puree, sugar, oil, and eggs until the mixture is completely smooth and the sugar has begun to dissolve.
- Sift the flour, baking soda, cinnamon, nutmeg, cloves, and salt directly into the wet mixture.
- Using a spatula, gently fold the ingredients together until no more streaks of white flour are visible, taking care not to overmix.
- Divide the batter evenly between the two pans and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaves to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- Prepare the glaze by mixing powdered sugar, 1 tbsp pumpkin puree, milk, and vanilla extract, then apply to the cooled bread.
