Ingredients:

  • 1.5 cups pumpkin puree
  • 1 cup granulated sugar
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.25 tsp ground cloves
  • 0.5 tsp salt
  • 1 cup powdered sugar
  • 1 tbsp pumpkin puree
  • 2 tbsp milk
  • 0.5 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease two 8x4 inch loaf pans.
  2. In a large bowl, whisk together the pumpkin puree, sugar, oil, and eggs until the mixture is completely smooth and the sugar has begun to dissolve.
  3. Sift the flour, baking soda, cinnamon, nutmeg, cloves, and salt directly into the wet mixture.
  4. Using a spatula, gently fold the ingredients together until no more streaks of white flour are visible, taking care not to overmix.
  5. Divide the batter evenly between the two pans and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the loaves to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  7. Prepare the glaze by mixing powdered sugar, 1 tbsp pumpkin puree, milk, and vanilla extract, then apply to the cooled bread.
