Ingredients:
- 1 cup rolled oats
- 2 tablespoons maple syrup or honey
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 1 cup milk (dairy or non-dairy, such as almond or oat milk)
- 1 large egg (or flax egg for vegan option: 1 tablespoon ground flaxseed mixed with 2.5 tablespoons water)
- 2 tablespoons melted coconut oil or butter
- ½ teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.
- In another bowl, whisk together the milk, egg, melted coconut oil, maple syrup, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until fully incorporated.
- If using optional mix-ins like berries or nuts, fold them in gently at this stage.
- Grease an 8x8-inch baking dish or individual ramekins and pour the mixture into it.
- Bake in the preheated oven for about25–30 minutes or until golden brown on top and set in the middle.
- Allow to cool slightly before serving.
- Serve warm topped with yogurt or additional fruit if desired!
