Ingredients:

  • 1 cup rolled oats
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup milk (dairy or non-dairy, such as almond or oat milk)
  • 1 large egg (or flax egg for vegan option: 1 tablespoon ground flaxseed mixed with 2.5 tablespoons water)
  • 2 tablespoons melted coconut oil or butter
  • ½ teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the milk, egg, melted coconut oil, maple syrup, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until fully incorporated.
  5. If using optional mix-ins like berries or nuts, fold them in gently at this stage.
  6. Grease an 8x8-inch baking dish or individual ramekins and pour the mixture into it.
  7. Bake in the preheated oven for about25–30 minutes or until golden brown on top and set in the middle.
  8. Allow to cool slightly before serving.
  9. Serve warm topped with yogurt or additional fruit if desired!
