- 4 large eggs (200g)
- 2 medium potatoes, peeled and thinly sliced (about 300g)
- 1 medium onion, diced (150g)
- 2 tablespoons olive oil (30ml)
- Salt and pepper to taste
- 1/2 cup shredded cheese (about 50g) - optional (e.g., cheddar or feta)
- Fresh herbs (e.g., parsley or chives), for garnish
Instructions:
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, add olive oil. Sauté sliced potatoes until they’re tender and slightly golden, about 10 minutes. Stir occasionally.
- Add diced onion to the pan, cooking for an additional 5 minutes or until the onion is translucent.
- In a mixing bowl, whisk together the eggs, salt, and pepper until well combined.
- Pour the egg mixture over the potato and onion. Stir gently to combine. Sprinkle cheese on top if using.
- Reduce heat to low. Cook for about 5-7 minutes, shaking the pan occasionally to prevent sticking, until the edges begin to set.
- Transfer the skillet to the oven and bake for an additional 10 minutes, or until the center is set and lightly golden.
- Let it cool slightly before slicing. Garnish with fresh herbs if desired. Serve warm or at room temperature.
