Ingredients:

  • 4 large eggs (200g)
  • 2 medium potatoes, peeled and thinly sliced (about 300g)
  • 1 medium onion, diced (150g)
  • 2 tablespoons olive oil (30ml)
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (about 50g) - optional (e.g., cheddar or feta)
  • Fresh herbs (e.g., parsley or chives), for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, add olive oil. Sauté sliced potatoes until they’re tender and slightly golden, about 10 minutes. Stir occasionally.
  3. Add diced onion to the pan, cooking for an additional 5 minutes or until the onion is translucent.
  4. In a mixing bowl, whisk together the eggs, salt, and pepper until well combined.
  5. Pour the egg mixture over the potato and onion. Stir gently to combine. Sprinkle cheese on top if using.
  6. Reduce heat to low. Cook for about 5-7 minutes, shaking the pan occasionally to prevent sticking, until the edges begin to set.
  7. Transfer the skillet to the oven and bake for an additional 10 minutes, or until the center is set and lightly golden.
  8. Let it cool slightly before slicing. Garnish with fresh herbs if desired. Serve warm or at room temperature.
