Prep time: 20 minutes + 4 hours rest time

Cook time: about 15 minutes

Total time: about 4 and a half hours

Yield: 4 servings

Ingredients

  • 4 tablespoons raw cacao powder, sifted
  • 2 tablespoons cornstarch
  • 1/4 teaspoon sea salt
  • 4 tablespoons maple syrup
  • 1 (13.5 ounce) can full-fat coconut milk
  • 1/4 cup strong brewed regular or decaf coffee (or water)
  • 1 teaspoon vanilla extract
  • 2 ounces dark chocolate, finely chopped
  • Soft and lightly sweetened whipped cream (for topping)
  • Fresh raspberries (for topping)
  • Cacao nibs (for topping)
  • Black sesame seeds (for topping)

Instructions

  1. In a medium saucepan, whisk together the cacao powder, cornstarch, and sea salt. Sift the cacao powder to avoid lumps.
  2. Gradually add the maple syrup, coconut milk (including any solid fat), and coffee (or water) to the dry mixture.
  3. Place the saucepan over medium heat, whisking regularly to prevent scorching. After 4-6 minutes, the mixture should reach a low simmer and begin to thicken.
  4. Continue whisking for about 30 seconds until the pudding is thick but still pourable.
  5. Remove from heat and whisk in the vanilla extract and chopped dark chocolate until melted and glossy.
  6. Divide the pudding into four small ramekins, bowls, or jars. Cover with plastic wrap, placing it directly on the surface to prevent a skin from forming.
  7. Chill in the refrigerator for at least one hour, but 4 hours is ideal for the best texture.
  8. Serve chilled with a dollop of whipped cream, fresh berries, cacao nibs, and black sesame seeds on top.
