Ingredients

  • 8 cups (about 1kg) peeled and sliced apples (about 7 apples)
  • 2 Tablespoons (28g) unsalted butter
  • 3 Tablespoons (37g) packed light or dark brown sugar
  • 1 Tablespoon fresh squeezed lemon juice
  • 1 Tablespoon all-purpose flour
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 6 Tablespoons (85g) unsalted butter, melted (for topping)
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) buttermilk
  • 2 teaspoons pure vanilla extract
  • 1 and 3/4 cups (219g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Optional: 1 Tablespoon granulated sugar + 1/2 teaspoon cinnamon, for sprinkling

Instructions

  1. Preheat the oven to 350°F (177°C). Lightly grease a 9×13-inch baking pan (or any 3–4-quart baking dish).
  2. In a medium saucepan, melt 2 Tablespoons of butter over medium heat. Add the apple slices, brown sugar, lemon juice, flour, and spices. Cook while stirring for about 5 minutes, until the apples are coated and start to soften.
  3. Transfer the apple filling to the prepared baking pan.
  4. For the topping, whisk the melted butter and sugar together in a medium bowl. Mix in the buttermilk, vanilla, flour, baking powder, and salt until mostly smooth (some small lumps are fine).
  5. Pour and spread the batter over the apples. Sprinkle the optional cinnamon-sugar on top. Gently swirl the topping with a butter knife.
  6. Bake in the center of the oven for 48-55 minutes, or until the topping is golden and the apple filling is bubbling. If the top browns too quickly, cover loosely with aluminum foil.
  7. Remove from the oven, let cool for at least 5 minutes before serving. Enjoy warm, at room temperature, or cold, with vanilla ice cream or salted caramel sauce.

Notes

For a make-ahead option, cook the apple layer, cool, cover, and refrigerate for up to 2 days. Bring to room temperature before using. Avoid refrigerating the unbaked cobbler as the batter thickens.

For freezing, the cobbler is best enjoyed fresh, but you can freeze the baked and cooled cobbler for up to 3 months. Thaw in the refrigerator and reheat as needed.
