Ingredients

  • 6 ripe peaches, pitted and sliced into 1/4-inch slices (peel on)
  • Juice from 1/2 a lemon
  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • Butter for greasing the pan
  • 1 1/3 cup (169 grams) all-purpose flour
  • 1 cup (200 grams) lightly packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup (113 grams) unsalted butter, softened to room temperature
  • 1/2 cup old-fashioned oats
  • Vanilla ice cream for serving

Instructions

  1. Preheat your oven to 350°F (180°C) and place a rack in the center.
  2. Generously grease an 8x8 baking pan with butter.
  3. In a medium bowl, combine the peach slices, lemon juice, granulated sugar, and cinnamon. Use your hands to toss until the peaches are evenly coated. Set aside.
  4. In another medium bowl, whisk together the flour, brown sugar, cinnamon, salt, nutmeg, and oats.
  5. Work in the softened butter using your fingertips until the mixture resembles a sandy texture.
  6. Add one handful of the topping to the peach mixture and gently toss.
  7. Pour the peach mixture into the prepared pan, spreading it evenly.
  8. Sprinkle the remaining topping over the peaches and lightly toss to expose some peach slices.
  9. Bake for 45-55 minutes or until the topping is crunchy and the peaches are bubbling.
  10. Serve warm with a scoop of vanilla ice cream.
