Delicious Ice Cream Sandwiches

These delightful ice cream sandwiches feature soft blondies and rich ice cream, perfect for summer treats!

Ingredients:

  • 1/2 cup (115 grams) unsalted butter
  • Scant 1 teaspoon kosher salt
  • 1 cup (200 grams) lightly packed light brown sugar
  • 3 tablespoons whole milk
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1 cup (127 grams) all-purpose flour
  • 1/4 cup rainbow jimmies, plus more for topping
  • 1 pint vanilla ice cream
  • 1 pint strawberry ice cream

Instructions:

  1. Preheat your oven to 325°F (160°C) and position a rack in the upper third.
  2. Prepare a 9×13-inch cake pan by lightly spraying the bottom with nonstick spray and lining it with parchment paper. Spray the parchment paper lightly as well.
  3. In a large bowl, melt the butter until just melted. Allow it to cool slightly before adding other ingredients to avoid cooking the egg.
  4. Whisk in the salt, brown sugar, milk, egg, and vanilla extract until the mixture is smooth.
  5. Sprinkle the baking powder over the mixture and stir to combine.
  6. Gently fold in the flour and 1/4 cup of rainbow sprinkles until just combined.
  7. Spoon the batter into the prepared pan and spread it evenly with a spatula. Top with an additional tablespoon of sprinkles.
  8. Bake for 15 minutes until set but still soft. Let cool completely in the pan or in the freezer for about 20 minutes.
  9. Once cool, run a knife around the edges and use the parchment to lift the blondie out. Cut in half widthwise.
  10. Return one half to the pan, upside down. Scoop vanilla and strawberry ice cream on top, alternating flavors.
  11. Sprinkle 2 tablespoons of additional sprinkles over the ice cream and press into an even layer with a spatula.
  12. Place the second blondie half on top, right side up. Use parchment to press down gently.
  13. Freeze for at least 6 hours, preferably overnight.
  14. Once solid, remove from the pan and cut into twelve 2-inch squares. Optionally, dip in sprinkles before serving.
