Ingredients

  • 1 lb. homemade rough puff pastry or 2 sheets store-bought frozen puff pastry (thawed)
  • 2 cups (240g) peeled & diced apples (about 2 medium apples)
  • 1 teaspoon cornstarch
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 cup (100g) granulated or brown sugar
  • 1 large egg (for egg wash)
  • 1 Tablespoon (15ml) milk (any kind)
  • Optional: 1/2 cup salted caramel, for drizzling

Instructions

  1. Prepare the dough: If making homemade rough puff pastry, follow your recipe until the second refrigeration. If using store-bought dough, ensure it is fully thawed and keep it in the refrigerator until ready.
  2. Make the filling: In a medium saucepan over medium heat, combine apples, cornstarch, vanilla, cinnamon, and sugar. Stir constantly for 5 minutes, then reduce to low heat and simmer for another 5 minutes. Remove from heat and let cool for 20 minutes.
  3. Prepare baking sheets: Line two large baking sheets with parchment paper or silicone baking mats.
  4. Shape the dough: Roll out the pastry dough to a 12-inch square. Cut into 4-inch squares and transfer to the baking sheets (4 on one, 5 on the other).
  5. Add the filling: Spoon 2-3 tablespoons of apple filling onto the center of each square. Fold into triangles and crimp edges with a fork to seal. Chill in the refrigerator for at least 15 minutes.
  6. Preheat the oven to 400°F (204°C). Make the egg wash by whisking the egg and milk together, then brush over the turnovers. Cut small steam vents on top.
  7. Bake for 23-25 minutes until golden brown. Rotate pans halfway through baking. Cool for 5 minutes before drizzling with caramel, if desired.

Notes
