The Easiest Most Delicious Focaccia Pizza

This easy overnight focaccia dough transforms into a thick, fluffy, and downright bouncy pepperoni pizza. It’s quickly become my favorite homemade pizza recipe – a perfect weekend movie night couch meal.

Ingredients

  • 4 3/4 cups (570 grams) all-purpose flour
  • 1 tablespoon (12 grams) fine sea salt
  • 2 1/4 teaspoons (7 grams) active dry yeast
  • 2 cups (452 grams) warm water
  • 1/4 cup (60 grams) olive oil
  • 1 tablespoon (21 grams) honey
  • 1 (12-ounce) jar pizza sauce (recommended: RAO s brand)
  • 2 cups (about 8 ounces) shredded mozzarella cheese
  • Thick-sliced pepperoni (to taste)
  • 1 cup (8 ounces) whole milk ricotta cheese, seasoned with salt, red pepper flakes, and dried oregano

Instructions

  1. Twelve to 48 hours before baking, make the dough. In a large bowl, mix flour, salt, and yeast together.
  2. Add warm water, olive oil, and honey to the dry mixture. Stir well with a wooden spoon or rubber spatula for about 2 minutes until combined.
  3. Cover the dough and let it rise at room temperature for 30 minutes.
  4. Using a dough scraper or damp hands, fold the bottom portion of the dough over the top four or five times. Cover the bowl and refrigerate for at least 12 hours, up to 48 hours.
  5. When ready to make the pizza, bring the dough to room temperature for 30 minutes.
  6. Grease a 9x13-inch cake pan generously with olive oil, then add the dough. Turn it over to coat both sides with oil without spreading it.
  7. Cover the pan and let the dough rise until nearly doubled in size, about 30-45 minutes.
  8. Once risen, use your fingertips to stipple the dough, spreading it across the pan and creating dimples.
  9. Sprinkle half of the shredded mozzarella cheese on top, followed by dollops of pizza sauce.
  10. Top with pepperoni slices, the rest of the mozzarella cheese, and dollops of seasoned ricotta.
  11. Allow the dough to rest while preheating the oven to 425°F (220°C).
  12. Once preheated, bake the pizza for 25-32 minutes until golden brown and bubbling.
  13. Let the pizza cool for 10 minutes before slicing into thick squares. Serve warm and enjoy!
