Ingredients:
- 1 baguette (approx. 12 oz / 340g)
- 3 tbsp (45ml) extra virgin olive oil
- 1/2 tsp (3g) flaky sea salt
- 8 oz (225g) plain goat cheese, softened
- 2 tbsp (30ml) heavy cream
- 1 tsp (5ml) lemon juice
- 1/4 tsp (1.5g) cracked black pepper
- 2 tbsp (30ml) honey
- 1 tbsp (15ml) fresh thyme
- 4 oz (115g) prosciutto, thinly sliced
Instructions:
- Cut the baguette on a slight diagonal into 1/4-inch (0.6cm) thick slices.
- Brush both sides of each slice lightly with olive oil and sprinkle with flaky sea salt.
- Arrange slices on a baking sheet and broil for 2–3 minutes per side until the edges are mahogany-colored and the center is golden.
- Combine softened goat cheese, heavy cream, lemon juice, and pepper in a bowl.
- Use a hand mixer or whisk vigorously for 60 seconds until the mixture is light and fluffy.
- Spoon a generous dollop of whipped goat cheese onto each warm toast.
- Top with a sliver of prosciutto or a small dollop of fig jam.
- Drizzle honey over the top and scatter fresh thyme leaves.
