Ingredients

  • 4 cups (495 grams) White Lily Self-Rising Flour, plus more for dusting
  • 1 tablespoon granulated sugar (optional)
  • 1/2 cup (113 grams) salted butter, cut into chunks
  • 4 tablespoons (56 grams) salted butter, melted (for brushing)
  • 4 ounces cream cheese, at room temperature
  • 1 1/2 cups (336 grams) whole milk buttermilk

Instructions

  1. Preheat your oven to 400°F (200°C) and place a rack in the upper third. Line a quarter sheet pan with parchment paper.
  2. In a large bowl, combine the self-rising flour and sugar (if using). Add the chunks of salted butter and mix by hand using a snapping motion until the mixture resembles grated Parmesan cheese.
  3. Incorporate the cream cheese in the same snapping way, ensuring the pieces are about the size of dimes.
  4. Make a well in the center of the mixture and pour in the buttermilk. Use a rubber spatula to combine until the dough is wet and sticky, being careful not to overwork it.
  5. Generously dust your countertop, hands, and a 2-inch biscuit cutter with flour. Turn the dough onto the floured surface and pat it into a 2-inch thick layer. Don t worry if the top has cracks.
  6. Cut out biscuits and place them on the prepared baking sheet so they touch. Gather the remaining dough, repeat the rolling and cutting process until all dough is used.
  7. Brush the tops of the biscuits with melted butter before baking. Bake for 16-18 minutes, rotating the pan halfway through.
  8. Once baked, remove from the oven and brush with any remaining melted butter. Allow to cool slightly before serving warm.
